01 - Combine soy sauce, brown sugar, and water in a medium bowl. Stir until sugar dissolves completely. Set aside.
02 - Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering.
03 - Add chicken pieces to the hot pan. Cook for 4–5 minutes, turning occasionally to brown on all sides.
04 - Stir in minced garlic and grated ginger. Sauté for 1 minute until fragrant, being careful not to burn the garlic.
05 - Pour prepared sauce over the chicken. Stir well to coat all pieces evenly.
06 - Bring to a simmer. Cook for 6–8 minutes until sauce thickens and coats the chicken, and chicken is cooked through.
07 - Remove from heat. Garnish with sliced green onions if desired. Serve hot with steamed rice or noodles.
