01 - Preheat the oven to 425°F. Line two large baking sheets with parchment paper.
02 - In a large bowl, combine all prepared vegetables. Drizzle with olive oil, sprinkle with salt, pepper, Italian herbs, and garlic powder. Toss to coat evenly.
03 - Arrange the vegetables in a single layer on the prepared baking sheets, ensuring they are not crowded for proper roasting.
04 - Roast for 25–30 minutes, turning once halfway through, until the vegetables are tender and slightly caramelized.
05 - Transfer the roasted vegetables to a serving platter. Garnish with fresh parsley, crumbled feta, and lemon wedges if desired. Serve warm or at room temperature.
