01 - Place spinach, cucumber, celery, apple, banana, lime juice, ginger, and chia seeds (if using) into blender container.
02 - Pour cold water or coconut water over ingredients in blender.
03 - Process on high speed until completely smooth, approximately 1-2 minutes.
04 - Taste mixture and sweeten with honey or agave syrup if desired. Pour into glasses, garnish with mint leaves, and serve immediately.
