01 - Toss chicken cubes with vegetable oil, garlic powder, soy sauce, black pepper, and salt. Let marinate for at least 10 minutes or up to 2 hours refrigerated.
02 - Thread marinated chicken pieces onto skewers. If using wooden skewers, soak them in water for 20 minutes beforehand to prevent burning.
03 - Preheat grill or grill pan to medium-high heat.
04 - Grill chicken skewers for 10-15 minutes, turning occasionally, until chicken is cooked through and slightly charred.
05 - While chicken cooks, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar in a bowl until smooth.
06 - Transfer cooked skewers to a plate. Brush liberally with Bang Bang sauce or drizzle over the top.
07 - Sprinkle with sesame seeds, scallions, and cilantro if using. Serve immediately.
